We source local meat from farms in Wiltshire, Somerset and the South West. The Black Farmer makes sure that we get the absolute best and most sustainable breeds for the season. STORAGE ADVICE
To maintain the freshness and quality of your Beef Brisket Roasting Joint, proper storage is essential. It is recommended to store the bag of beef brisket in the refrigerator set to a temperature of 32°F to 40°F (0°C to 4°C). Ensure the bag is securely sealed or transfer the brisket to an airtight container or resealable bag to prevent any leakage or cross-contamination. The beef brisket can be refrigerated for up to 3-4 days while maintaining its quality.

Your item will arrive in a 100% recycled box lovingly packed with FSC-certified shredded spruce from Britain and Sweden, natural sheep’s wool insulation and non-toxic chilled gel packs, all of which can be reused, composted or recycled. To recycle the gel packs, simply cut a corner and dispose of the contents through your normal domestic waste system, as the gel isn’t harmful to the environment. Better still, reuse them by storing in the freezer and chilling other products. The only component from our packaging that can’t be recycled are the foil liners which need to be go in household waste; the poly bags meat comes in needs to go in plastic recycling.

To cook a 1kg Beef Brisket Roasting Joint, here are some short cooking instructions:
1. Preheat your oven to 150°C (300°F) or gas mark 2.
2. Season the beef brisket with salt and pepper or your preferred seasonings.
3. Heat a large, oven-safe pan or Dutch oven over medium-high heat.
4. Add some oil to the pan and sear the beef brisket on all sides until browned. This helps to seal in the flavors.
5. Remove the brisket from the pan and set it aside momentarily.
6. In the same pan, add chopped onions, carrots, and celery (known as mirepoix) and sauté until they start to soften and caramelize.
7. Place the seared brisket back into the pan on top of the vegetables.
8. Add beef stock or broth to the pan, ensuring that the liquid covers about halfway up the sides of the brisket. You can also add additional herbs and spices if desired, such as thyme, rosemary, or garlic.
9. Cover the pan with a lid or foil and transfer it to the preheated oven.
10. Allow the brisket to roast in the oven for approximately 3 to 4 hours or until it becomes tender. Check on it occasionally and baste it with the cooking liquid to keep it moist.
11. After the cooking time, remove the brisket from the oven and let it rest for about 10 minutes.
12. Slice the beef brisket against the grain and serve it with the vegetables and cooking liquid as a flavorful gravy.

Note: Cooking times may vary depending on your oven and desired level of tenderness. It’s always a good idea to use a meat thermometer to ensure the internal temperature reaches a safe level of doneness. The USDA recommends cooking beef to an internal temperature of at least 63°C (145°F) for medium-rare or 71°C (160°F) for medium.
