STORAGE ADVICE
To maintain the freshness and quality of mutton, it is recommended to store it in the refrigerator at a temperature of 32°F to 40°F (0°C to 4°C). Keep the mutton wrapped tightly in plastic wrap or place it in an airtight container to prevent any exposure to air or odors. Properly stored, mutton can be refrigerated for up to 2-3 days. If you plan to store it for a longer period, you can also freeze the mutton. Wrap it tightly in plastic wrap and aluminum foil or place it in a freezer-safe bag or container. Frozen mutton can maintain its quality for approximately 6-9 months. When ready to use, thaw the mutton in the refrigerator before cooking for the best results.

Your item will arrive in a 100% recycled box lovingly packed with FSC-certified shredded spruce from Britain and Sweden, natural sheep’s wool insulation and non-toxic chilled gel packs, all of which can be reused, composted or recycled. To recycle the gel packs, simply cut a corner and dispose of the contents through your normal domestic waste system, as the gel isn’t harmful to the environment. Better still, reuse them by storing in the freezer and chilling other products. The only component from our packaging that can’t be recycled are the foil liners which need to be go in household waste; the poly bags meat comes in needs to go in plastic recycling.

Here’s cooking instruction for mutton:

1. Prep the mutton: Start by washing the mutton pieces thoroughly under running water and patting them dry with a paper towel. Trim off any excess fat if desired.
2. Marinate the mutton: In a bowl, combine the mutton pieces with your choice of spices and marinade. Popular options include a mixture of yogurt, ginger-garlic paste, turmeric, chili powder, cumin, coriander, and salt. Coat the mutton pieces well with the marinade and let them sit for at least 30 minutes or refrigerate for a few hours to allow the flavors to infuse.
3. Sear the mutton: Heat a cooking pot or skillet over medium-high heat and add a tablespoon of oil or ghee. Once the oil is hot, add the marinated mutton pieces in batches, ensuring they are evenly spaced and not overcrowded. Sear the mutton on all sides until browned, which helps seal in the juices.
4. Slow cook or pressure cook: There are two common methods for cooking mutton. For slow cooking, add the seared mutton back to the pot and add enough water or stock to cover the pieces. Reduce the heat to low, cover the pot, and simmer for 1 to 2 hours until the mutton becomes tender and the flavors develop. Alternatively, you can use a pressure cooker to expedite the cooking process. Transfer the seared mutton to the pressure cooker, add some water or stock, and cook on high pressure for about 25-30 minutes.
5. Check for doneness: After the cooking time is complete, check the mutton for tenderness. It should be easily pierced with a fork and should not be tough. If it’s not fully cooked, continue cooking for a few more minutes.
6. Rest and serve: Once the mutton is cooked to your desired tenderness, remove it from the heat and let it rest for a few minutes. This allows the juices to redistribute and enhances the flavors. Serve the mutton hot with rice, bread, or naan, and enjoy!
