The Black Farmer Topside roasting joint is a great-value cut that will feed a large party. It is difficult to prepare well, so we offer it here tied, rolled and ready to cook. Topside is a tender, lean joint that should be sliced thinly and served medium-rare.

STORAGE ADVICE To maintain the quality and freshness of Topside Beef, it is important to store it properly. Place the beef in an airtight container or wrap it tightly in plastic wrap to prevent air and moisture from entering. Store the Topside Beef in the refrigerator at a temperature of 32°F to 40°F (0°C to 4°C). Properly stored, it can be refrigerated for up to 3-4 days. If you need to store it for a longer period, you can freeze the beef. Wrap it tightly in plastic wrap and aluminum foil or place it in a freezer-safe bag or container. Frozen Topside Beef can maintain its quality for approximately 6-12 months. When you’re ready to use it, thaw the beef in the refrigerator before cooking for the best results.

Your item will arrive in a 100% recycled box lovingly packed with FSC-certified shredded spruce from Britain and Sweden, natural sheep’s wool insulation and non-toxic chilled gel packs, all of which can be reused, composted or recycled. To recycle the gel packs, simply cut a corner and dispose of the contents through your normal domestic waste system, as the gel isn’t harmful to the environment. Better still, reuse them by storing in the freezer and chilling other products. The only component from our packaging that can’t be recycled are the foil liners which need to be go in household waste; the poly bags meat comes in needs to go in plastic recycling.

Ingredients:

  • 2-3 pounds topside beef
  • Salt and pepper (to taste)
  • Olive oil or vegetable oil
  • Optional seasonings: garlic powder, onion powder, dried herbs (such as thyme or rosemary)

Instructions:

  1. Preheat your oven to 325°F (163°C).
  2. Take the topside beef out of the refrigerator and let it come to room temperature for about 30 minutes. This will ensure even cooking.
  3. Season the beef with salt and pepper, and any additional seasonings you prefer. Rub the seasonings all over the meat, ensuring it is evenly coated.
  4. Heat a large oven-safe skillet or roasting pan over medium-high heat. Add a small amount of oil (about 1-2 tablespoons) to the pan and let it heat up.
  5. Once the oil is hot, carefully add the seasoned topside beef to the pan. Sear the meat on all sides until it develops a nice brown crust, which should take about 2-3 minutes per side.
  6. Once the beef is seared, transfer the skillet or roasting pan to the preheated oven. If you’re using a roasting pan, you may need to cover it with a lid or foil.
  7. Cook the topside beef in the oven for approximately 20-25 minutes per pound for medium-rare doneness. Adjust the cooking time according to your desired level of doneness. Use a meat thermometer to check the internal temperature of the beef. For medium-rare, it should register around 135°F (57°C).
  8. Remove the beef from the oven and transfer it to a cutting board. Cover it loosely with foil and let it rest for about 10-15 minutes. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful roast.
  9. After the resting period, slice the topside beef against the grain into thin slices. This helps to ensure tenderness.
  10. Serve the sliced beef with your favorite sides and enjoy!

Note: Cooking times may vary depending on the size and thickness of the topside beef. It’s always a good idea to use a meat thermometer to ensure the desired level of doneness.
