Method

Step 1 - Roast the Sweet Potatoes


Preheat your oven to 220°C (425°F/gas mark 7). Line a baking sheet with foil. Use a fork to poke several holes into each sweet potato, then place them on the prepared baking sheet. Roast the sweet potatoes in the preheated oven for 40 to 50 minutes, or until they are puffed up and soft inside when pierced with a fork.

Step 2 - Prepare the Sweet Potato Mash


Once the sweet potatoes are roasted and still hot, carefully scoop out the flesh using a spoon. (Tip: Use a tea towel to hold the hot potatoes to avoid burning your fingers.) Place the scooped sweet potato flesh into a bowl. Add 50g of butter, chopped spring onions, and salt to taste. Use a whisk to mix everything together until smooth and well combined. Cover and set the mash aside.

Step 3 - Cook the Cumberland Sausages


Heat a non-stick frying pan over medium heat. Add the Cumberland sausages and fry them until they are evenly golden brown on all sides. Transfer the sausages to an ovenproof dish and bake in the oven for 6-8 minutes, or until they are thoroughly cooked through.

Step 4 - Make the Mustard Sauce


In the same frying pan used for the sausages, add the remaining 100g of butter and allow it to melt over medium heat. Stir in the cornflour and cook for 1 minute, stirring constantly. Add the wholegrain mustard and continue to whisk together. Gradually add the water while whisking continuously to prevent lumps from forming. Cook until the sauce reaches a thick, smooth consistency. Season with salt to taste.

Step 4 - Assemble and Serve


To serve, place a generous scoop of sweet potato mash on each plate, top with the cooked Cumberland sausages, and drizzle over the mustard sauce. Garnish with extra chopped spring onions if desired. Enjoy this delicious and comforting meal hot!
