8 red baby tomatoes, cut in half
3 rainbow bell peppers, sliced very finely
1 onion, sliced thinly
1 tbsp coconut oil
¼ scotch bonnet pepper, diced (optional, add to taste)
1 spring onion (scallion), finely chopped
Method
Step 1
Start by draining the ackee into a colander and set it aside. Ackee is delicate, so handle it gently to avoid breaking it apart.
Step 2
Heat the coconut oil in a large, heavy-based pan over medium heat until hot. Add the sliced onion, mixed spice, salt, and pepper to the pan. Cook for about 2 minutes, stirring occasionally, until the onions are soft and translucent.
Step 3
Pour in the coconut milk and bring to a simmer. Let it cook down and reduce by half, which should take about 3-4 minutes. This step enhances the creamy richness of the dish.
Step 4
Add the finely sliced bell peppers, fresh thyme, and halved baby tomatoes to the pan. Stir the mixture gently for about 1 minute on medium heat. This will soften the peppers slightly and release the flavours.
Step 5
Once the vegetables are well mixed and the coconut milk has reduced, carefully add the drained ackee to the pan. Add the diced scotch bonnet pepper if you like a bit of heat, but remember it is very spicy, so adjust to your preference. Gently fold the ackee into the mixture, being careful not to mash it, as it is very delicate. Allow it to cook for a further minute to warm through and absorb the flavours.

Transfer the ackee mixture to a serving bowl and garnish with finely chopped spring onion. Serve hot with your favourite sides, such as rice and peas, fried dumplings, or plantains for a complete Caribbean vegan meal. Enjoy!
