Expertly prepared with the bone removed for easy carving, this cut is tender, juicy, and perfect for special meals or standout roasts. Its versatility allows it to pair beautifully with simple seasonal greens or a rich red wine sauce.

Oven Roasting (Recommended):
Remove beef from the fridge 30–60 minutes before cooking to bring to room temperature.
Preheat oven to 160°C (Fan 140°C) / 325°F / Gas Mark 3.
Season generously with salt, pepper, and your choice of herbs or rub.
Optiol: Sear the beef in a hot pan with a little oil for 2–3 minutes on all sides to enhance flavour.
Place the joint in a roasting tray.
Roast for:
25–30 minutes per 500g for medium
35 minutes per 500g for well done
Rest the beef for at least 20 minutes under foil before slicing to retain juiciness.

Slow Roast (for pulled-style beef):
Preheat oven to 140°C (Fan 120°C) / 275°F / Gas Mark 1.
Place the seasoned boneless rib in a deep roasting tray with a splash of stock or red wine.
Cover tightly with foil or a lid.
Cook for 4–5 hours until fall-apart tender.
Shred or slice and serve with sauces or sides.

Keep refrigerated below 5°C. Suitable for freezing. Defrost in the fridge and use within 24 hours. Do not refreeze after thawing.
