British Steak & Kidney Pie

Published 11 February 2026 · Updated 14 October 2026

A proper British steak and kidney pie with tender diced beef and kidney slow-braised in a dark, thyme-scented gravy beneath golden pastry. Browning the meat in batches and cooling the filling before the lid goes on keeps the pastry crisp and the gravy rich.

Timing: Total hands-on work is 50 minutes: 20 minutes browning the meat on the critical path, 20 minutes making and chilling the pastry (which runs in parallel with the 105-minute braise and so adds nothing to elapsed time), and 10 minutes assembling the pie after the filling cools. Critical-path prep is therefore 30 minutes. The 160-minute cook covers building the base (10 minutes), the 105-minute braise (90 minutes covered plus 15 minutes uncovered to thicken) and the 45-minute bake. Cooling (20 minutes) and resting (5 minutes) are counted separately, giving a total elapsed time of 215 minutes.

Other Ingredients You'll Need

  • Plain flour — 4 tbsp for the meat, plus 350g for the pastry
  • British ale — 200ml
  • Egg yolks — 2, divided: 1 yolk for the pastry, 1 beaten for glazing
  • Tomato purée — 1 tbsp
  • Fresh thyme — 1 tsp leaves
  • Worcestershire sauce — 1 tsp
  • Bay leaves — 2
  • Salt and black pepper — To season

Method

Prepare and brown the meat

Heat the oven to 160°C (140°C fan). Pat the diced steak and kidney dry and toss it in the 4 tablespoons of flour with plenty of salt and pepper. Heat 2 tablespoons of beef dripping in a heavy casserole and brown the meat in 3 to 4 batches over a high heat, about 4 minutes a batch, topping up with a little more dripping if the pan looks dry. Do not crowd the pan and do not rush this stage - the colour you build here is the flavour of the finished gravy.

Build the base

Lower the heat and add the sliced onions and diced carrots to the same pan. Cook for about 10 minutes until softened and lightly golden, scraping up the browned bits. Stir in the tomato purée and cook it out for a minute.

Slow braise the filling

Return the meat to the pan with the ale, stock, Worcestershire sauce, thyme and bay leaves. Bring to a gentle simmer, cover and transfer to the oven for 1 hour 30 minutes. Uncover and cook for a further 15 minutes until the gravy is thick and coats the back of a spoon. Taste and season. Remove the bay leaves and set the filling aside to cool for 20 minutes.

Make the pastry

While the filling braises, rub the cold cubed butter into the 350g of plain flour with a pinch of salt until it looks like breadcrumbs. Stir in 1 egg yolk and add 4 to 5 tablespoons of cold water, a little at a time, until the dough just comes together. Wrap and chill for 20 minutes.

Assemble the pie

Preheat the oven to 190°C (170°C fan) / Gas Mark 5. Roll out two-thirds of the pastry and line a 23cm (1.5 litre) deep pie dish, letting the edges overhang. Spoon in the cooled filling. Roll out the remaining pastry for the lid, lay it over, and seal the edges firmly. Trim and crimp, then cut a small steam hole in the centre.

Bake and rest

Brush the lid with the beaten egg yolk. Bake for 40 to 45 minutes until the pastry is golden, crisp and risen. Rest for 5 minutes before serving.

Serving Suggestion

Serve with creamy mash or buttered greens to catch the gravy, and a spoonful of sharp pickle to cut through the richness.

Frequently Asked Questions

What cut of beef is best for steak and kidney pie?

Diced stewing steak and kidney that you braise low and slow. The long, gentle cook is what makes the meat tender and gives the gravy its depth; a quick-cook cut would turn tough.

Why cool the filling before adding the pastry?

A hot filling creates steam, which softens the base and stops the lid crisping. Letting it cool for 20 minutes keeps the pastry short and the gravy thick.

Can I make steak and kidney pie ahead?

Yes. Cook and cool the filling a day ahead and keep it chilled, then assemble and bake when you need it.

What pastry should I use for the lid?

A shortcrust made with cold butter gives a crisp, short lid that holds up against the gravy. Keep everything cold and handle the dough lightly.

What do you serve with steak and kidney pie?

Creamy mash or buttered greens to catch the gravy, and a spoonful of sharp pickle or mustard to cut through the richness.
