Published 08 October 2026 · Updated 10 October 2026

This Caribbean-style chicken and okra stew uses one 340g pack of boneless chicken thighs and two 100g packs of fresh okra to make a bright, tomato-rich two-person meal. Allow 60 minutes in total: 20 minutes for active preparation, no marinating time, 35 minutes cooking and 5 minutes resting. Other Ingredients You'll Need

  • Rapeseed or vegetable oil — 1 tbsp
  • Brown onion — 1 medium, finely sliced
  • Red pepper — 1, deseeded and sliced
  • Garlic — 2 cloves, finely chopped
  • Fresh ginger — 15g, finely grated
  • Chopped tomatoes — 400g tin
  • Chicken stock — 150ml, hot
  • Allspice — 1 tsp
  • Smoked paprika — 1 tsp
  • Dried thyme — 1 tsp
  • Scotch bonnet or chilli — 1/2, finely chopped, optional
  • Lime — 1/2, juiced
  • Fine salt and black pepper — to taste

Method

Prepare the chicken and okra

Pat the chicken dry and cut it into even 4cm pieces. Trim the okra tops and cut the pods into 2cm pieces. Keep the okra dry until it is ready to go into the stew; this helps you control the final texture.

Brown the chicken

Heat the oil in a wide, lidded casserole or deep frying pan over medium-high heat. Season the chicken, then brown it in two batches for about 3 minutes per side. It does not need to be cooked through yet. Transfer the browned chicken to a plate.

Build the tomato base

Reduce the heat to medium. Add the onion and red pepper and cook for 5 minutes until softened. Stir in the garlic, ginger, allspice, smoked paprika, thyme and optional chilli for 1 minute. Add the chopped tomatoes and hot stock, scraping up any browned pieces from the base.

Simmer the chicken

Return the chicken and any resting juices to the pan. Bring to a gentle simmer, cover and cook for 12 minutes. Stir once or twice so the sauce does not catch.

Add the okra and finish

Stir in the okra, cover again and simmer for 10–12 minutes until the okra is tender and the chicken is steaming hot throughout, with no pink meat. If using a thermometer, check the thickest chicken piece reaches 75°C. Remove the lid for the final 2 minutes if the sauce needs reducing.

Rest and serve

Turn off the heat and rest the stew, covered, for 5 minutes. Stir in the lime juice, taste and adjust the salt, pepper and chilli. Serve with rice, flatbreads or another suitable accompaniment.

Serving Suggestion

Serve with rice or flatbreads to catch the tomato and lime sauce. Cool leftovers quickly, refrigerate promptly and reheat until steaming hot throughout.

Frequently Asked Questions

How do I cook okra without it becoming too slimy?

Keep the okra dry before cooking, cut it just before adding it, and avoid overcooking it. Adding it near the end of the stew keeps the pieces recognisable while allowing their natural thickening power to enrich the sauce.

How long does chicken and okra stew take to cook?

Allow about 20 minutes for preparation and 35 minutes on the hob, followed by a 5-minute rest. The chicken must be steaming hot throughout with no pink meat; use a thermometer if available.

Can I use chicken breast instead of thighs?

Yes, but chicken breast is leaner and can dry out. Use evenly cut pieces and begin checking them after the 12-minute covered simmer; add the okra only once the chicken is nearly cooked.

What should I serve with chicken and okra stew?

Serve it with plain rice, coconut rice, flatbreads or another simple starch that can catch the tomato sauce. Keep the accompaniment mild so the okra, lime and spices stay noticeable.

Can I freeze chicken and okra stew?

Cool it quickly, refrigerate it promptly and freeze in a sealed container. Defrost thoroughly in the fridge and reheat gently until steaming hot throughout. The okra will be softer after freezing.
