Method

Step 1 - Bring the Beef to Room Temperature


Take the beef out of the fridge 30 minutes before cooking. This ensures even roasting and a juicier finish.

Step 2 - Preheat & Season


Preheat your oven to 220°C (200°C fan / Gas Mark 7).

Rub the beef all over with olive oil, salt, pepper, mustard, garlic, and herbs.

Step 3 - Roast


Place the joint on a rack over a roasting tray. Roast for:
Rare: 35 minutes
Medium: 40 minutes
Well done: 45 minutes

Step 4 - Rest Like a Pro


Remove from the oven, loosely cover with foil, and rest for 10–15 minutes. Don’t skip this — it locks in the juices.

To Serve


Slice against the grain and serve with crispy roast potatoes, seasonal veg, Yorkshire puddings, and a proper gravy made from the pan juices. Simple. Honest. British.

Chef’s Tip


For extra depth, add a splash of beef stock or red wine to the roasting tray halfway through cooking — it’ll give your gravy real backbone.
