Pan-Fried Potato Rösti

Published 29 October 2026 · Updated 29 October 2026

These potato rösti have crisp golden edges and a tender middle, with the flavour of the potato left to lead. Coarse grating, a firm squeeze and shallow, compact patties help the centres soften before the crust gets too dark.

Timing: Untested 34-minute baseline: 15 prep (scrubbing, peeling, weighing, grating, squeezing, portioning and measuring), then 2 pan heating + 1 seasoning/loading/shaping + 6 first face + 1 turning + 6 second face + 2 centre checks/transfer + 1 plating = 19 cooking/finishing. The 2-minute unseasoned potato wait overlaps pan heating and adds zero elapsed time; marinate_minutes=0 means no additional sequential marination, not no waiting. One batch of four only: no oven heat, second-batch queue, cooked-batch hold, intentional rest or separate cooling stage. Extra preparation, heating, crust setting or centre cooking increases elapsed time; tenderness takes precedence over the estimate. Pan cooling after serving is cleanup, outside recipe completion. Accompaniments are prepared separately.

Ingredients

  • Big Potatoes - 500g

    Potatoes

    400g after peeling, before squeezing

Ordinary raw potatoes; scrub, peel lightly, weigh 400g, then coarsely grate. One 500g shopping pack is proposed, not 500g prepared potato. No specific cultivar or floury/waxy guarantee.

Other Ingredients You'll Need

  • Rapeseed oil — 30ml (2 tbsp) (All for the pan; no butter or finishing drizzle.)
  • Fine salt — 2g (All into the squeezed potato immediately before shaping.)
  • Ground black pepper — 0.5g (about ¼ tsp) (All into the squeezed potato immediately before shaping.)

Method

Prepare and squeeze the potatoes

Allow about 15 minutes for all preparation and measuring. Set out a heavy nonstick frying pan with a flat cooking base at least 26cm across (usually about 30cm at the rim), a wide thin heatproof spatula and a serving plate. Scrub sound ordinary potatoes, peel lightly and weigh 400g peeled potato; do not use green, badly damaged or extensively sprouted potatoes. Coarsely grate through approximately 3–4mm holes onto a clean cloth reserved for vegetables. Gather the cloth and squeeze firmly over the sink until water no longer runs freely. Do not rinse the grated potato: its remaining starch helps the strands hold together. Put all the squeezed potato in a bowl, loosen the strands and divide into four equal loose portions without seasoning yet. Measure the oil, salt and black pepper.

Heat the pan

Add all 30ml rapeseed oil to the pan and heat over medium heat for about 2 minutes, until fluid and gently shimmering, never smoking. The unseasoned squeezed potato waits in its bowl during this short heat-up; do not leave it prepared for later. A slower hob adds time.

Season and shape four shallow rösti

Allow about 1 minute to scatter all the salt and black pepper over the potato, toss briefly and place the four portions in the pan. Press each together with the spatula into a compact disc about 9–10cm across and no more than 8mm thick, leaving gaps between them. Thickness matters more than exact diameter. The specified pan must take all four without touching; do not heap them into thick cakes. Keep hands clear of hot oil.

Let the first crust form

Fry over medium to medium-low heat for about 6 minutes without repeatedly lifting or pressing. The base should become golden and the edges begin to hold together. Slide the spatula fully underneath to check; if the cake still clings or folds apart, give it longer to form a crust rather than forcing it. Reduce the heat if the outside darkens quickly.

Turn and cook the second face

Allow about 1 minute to turn all four gently with the wide spatula, supporting each whole cake. Fry the second face for about 6 minutes over medium to medium-low heat, until golden. Keep them shallow and uncovered so moisture can escape.

Check the centres and serve

Allow about 2 minutes for checking and transfer: slide a small knife sideways into the thickest centre of each rösti, keeping clear of the pan. The potato should offer little resistance; cut into one if unsure and look for tender shreds with no hard, raw crunch. A brown crust alone is not enough. If a centre is firm, lower the heat and keep frying, turning gently as necessary, until tender; any extra cooking extends the estimate. Lift onto the serving plate, leaving excess oil in the pan, and allow about 1 minute to plate and serve straight away, uncovered. There is no separate draining rest, oven holding or second batch in this recipe. Switch off the hob and leave the pan safely to cool before cleaning.

Serving Suggestion

Serve as a potato side beside Pork Chops with Cider and Mustard, or with separately cooked eggs and Garlic Butter Kale. Accompaniments, their ingredients and cooking times are not included.

Frequently Asked Questions

Do I need egg or flour to hold them together?

Not in this version. The potato’s own starch helps bind the compact strands. Do not rinse after grating, squeeze firmly and let the first crust set before turning with a wide spatula. Binder-free cohesion has not been kitchen tested by The Black Farmer.

Must the potatoes be floury?

Both floury and waxy ordinary potatoes are used for rösti, but the centres differ: floury potatoes soften more, while waxy ones retain more distinct strands. The linked product does not identify a cultivar. This recipe therefore promises neither a named variety nor a uniformly fluffy interior; use the centre-tenderness check.

Why is the outside brown but the middle still firm?

The patties may be too thick or the heat too high. Keep them no more than 8mm thick and reduce to medium-low if they colour quickly. Continue cooking until a knife passes through the centre with little resistance, not merely until the faces are brown.

Is 400g the weight before or after squeezing?

Weigh 400g after peeling and before grating or squeezing. The shopping link proposes one 500g pack of whole potatoes, allowing for ordinary peeling; weigh the prepared amount rather than assuming a potato count.

Can I use a smaller pan?

The 34-minute estimate assumes all four fit in one batch in the specified flat base with gaps. A smaller pan requires a separate batch schedule and cooked-rösti holding plan; it is not included in these timings. Do not crowd the pan or make thicker patties to force them in.
