  • rapeseed oil - 1tbsp
  • Salt & Pepper - To taste
  • Tomato Purée - 1 tbsp
  • Somked paprika - 1 tsp
  • Fresh Thyme - 2 sprigs
  • Bay Leaves - 1 leaf
  • ground allspice - ½ tsp
  • Fresh parsley or coriander to finish


Method

Step 1 - Brown the sausages

Heat the oil in a large, heavy-based casserole over medium heat. Add the sausages and brown on all sides until golden. Remove and set aside.

Step 2 - Build the base

In the same pan, add the sliced onion and cook for 5–7 minutes until softened and lightly caramelised. Stir in the garlic, red pepper, smoked paprika and allspice. Cook for 1 minute until fragrant.

Step 3 - Create the stew

Add the chopped tomatoes, tomato purée, chicken stock, thyme, bay leaf and scotch bonnet (if using). Stir well and bring to a gentle simmer.

Step 4 - Simmer low and slow

Return the sausages to the pan. Cover and simmer gently for 20–25 minutes.

Step 5 - Add the beans

Stir in the butter beans and kidney beans. Cook uncovered for a further 10–15 minutes until the sauce thickens and the sausages are cooked through.

Step 6 - Finish properly

Remove the thyme sprigs and bay leaf. Season to taste. Scatter over fresh herbs before serving.

To Serve

Serve in warm bowls with crusty bread, buttery mash or steamed rice. Rich, smoky and full of character — this is proper British comfort with Caribbean confidence.
