Grill Method: Remove from fridge 30 minutes early. Grill on medium-high heat for 4–5 minutes per side; baste with BBQ sauce for a sticky glaze. Rest 5 minutes before serving.
Oven Method: Preheat to 200°C (180°C fan). Sear 2–3 minutes per side in an ovenproof skillet, then bake 8–10 minutes. Rest before serving.
