To store garlic, keep the bulbs in a cool, dry, and well-ventilated place. A pantry or a basket in a dry kitchen area is ideal. Avoid storing garlic bulbs in the refrigerator as the cold and moisture can cause them to sprout and become rubbery. Keep the bulbs whole until you're ready to use them to preserve their freshness. Once you break a bulb, use the cloves within 10 days. If you have extra peeled or chopped garlic, you can store it in an airtight container with a little olive oil in the refrigerator for a short period, but it's best to use fresh garlic whenever possible for the most robust flavour.
