Cooking Method: Slow roast or braise

Time:

Whole (3–4kg): 3.5 to 4.5 hours at 160°C (fan 140°C)

Half (1.7–2.2kg): 2.5 to 3 hours at 160°C

Instructions:

Marinate with garlic, rosemary, olive oil, and lemon overnight

Roast covered for most of the time, then uncover for last 30–40 mins to crisp the exterior

Internal temp should reach 85°C for fall-apart tenderness
