Grill Method:
Bring steak to room temperature for 1 hour. Rub with olive oil, salt, pepper, and optional garlic or rosemary. Grill on high heat for 6–7 minutes per side for medium-rare, rotating for even searing. Rest for 10 minutes before serving.

Oven Method:
Preheat oven to 220°C (200°C fan). Sear in a hot ovenproof skillet for 3–4 minutes per side. Transfer to oven and cook for 15–20 minutes for medium-rare. Rest for 10 minutes under foil.

Store below 3°C. Cook before eating. Consume on the day opened. Freeze on the day of purchase for 6–9 months. Defrost thoroughly in the fridge before cooking.
