Stew / Casserole:

Brown meat in a hot pan.

Add stock, vegetables, herbs.

Simmer gently for 1.5–2.5 hours until tender.

Steak & Kidney Pie:

Prepare a stew base (as above) and allow to cool.

Add to a pie dish and top with pastry.

Bake at 200°C / Fan 180°C / Gas 6 for 25–30 minutes until golden.

Steak & Kidney Pudding:

Line a pudding basin with suet pastry.

Fill with cooked steak & kidney mix.

Steam for 3–4 hours.

Keep refrigerated at 0–5°C. Once opened, consume within 24 hours. If frozen on arrival, defrost thoroughly in the refrigerator before cooking.
