Steak Grill Method:
Preparation: Remove the steak from the fridge 30 minutes before cooking to allow it to come to room temperature.
Seasoning: Rub with olive oil, salt, pepper, and your favourite steak rub.
Preheat: Heat a grill or pan to high.
Cooking: Grill the skirt steak for 3-4 minutes on each side for medium-rare. Skirt steak cooks quickly, so be attentive.
Resting: Let the steak rest for 5 minutes, then slice thinly against the grain.
Serve: Serve with grilled peppers and onions for a rustic, flavour-packed meal.

Preparation: Preheat your oven to 200ºC (180ºC fan) or gas mark 6. Bring the skirt steak to room temperature.
Seasoning: Rub the steak with olive oil, salt, pepper, and your preferred seasoning.
Searing: Sear the steak in an ovenproof pan for 2-3 minutes per side.
Oven Cooking: Transfer the pan to the oven and cook for 10-12 minutes for medium-rare.
Resting: Rest the steak for 5 minutes under foil.
Serving: Slice against the grain and serve with grilled peppers and onions.
