Slow-cook the diced mutton with herbs, spices, and root vegetables for a rich, comforting stew. Add Scotch bonnet, thyme, and garlic for a Caribbean twist, or keep it traditional with rosemary and red wine.

Preparing: Rinse the diced mutton under cold water to remove any impurities. Pat dry with paper towels. Season lightly with salt and pepper.

Browning: Heat a large pot or Dutch oven over medium-high heat. Add a small amount of oil and let it heat up. Place the diced mutton in the pot and brown on all sides until golden. Remove from the pot and set aside.

Building Flavours: In the same pot, add chopped onions, carrots, and celery. Sauté the vegetables until softened and lightly browned. Add minced garlic and cook for another minute or until fragrant.

Braising: Return the diced mutton to the pot. Pour in enough beef or lamb stock (or water) to cover the meat. Add herbs and spices such as bay leaves, thyme, rosemary, or ground cumin. Bring the liquid to a boil, then reduce the heat to low. Cover and let it simmer gently for 1.5–2 hours or until the mutton is tender. Stir occasionally and skim off any foam that rises to the surface.

Optional – Thickening the Sauce: If you prefer a thicker sauce, once the mutton is tender, remove it from the pot and set aside. In a small bowl, mix a few tablespoons of flour or cornstarch with cold water to create a slurry. Slowly stir this into the simmering liquid until it thickens to your liking. Return the mutton to the pot and cook for another 10–15 minutes.

Serving: Remove the mutton from the pot and let it rest briefly. Serve hot with the sauce, pairing it with rice, mashed potatoes, or crusty bread.

Note: Cooking times may vary depending on the size and quality of the diced mutton. It’s important to cook until the meat is tender and flavorful. Adjust seasoning to your taste throughout the process.
