Preheat oven to 175°C (350°F).
Allow lamb to reach room temperature for 30 minutes.
Season with rosemary, garlic, thyme, and olive oil.
Place bone-side down on a roasting rack.
Roast for approx. 20 minutes per 450g.
Baste halfway through for added moisture.
Cook to 57–60°C for medium-rare, 63°C for medium, 71°C for well-done.
Rest under foil for 15 minutes before carving.

Cook before eating. Keep refrigerated below 3°C. Once opened, consume the same day. Freeze on day of purchase for 6–9 months. Defrost thoroughly in the fridge before cooking.
