Remove from packaging and pat dry. Bring to room temperature. Roast at 200 °C (fan 180 °C) for 20 min, then reduce to 180 °C (fan 160 °C) and cook for 30 min per 500 g to a core temperature of ≥ 70 °C. Alternatively, pan-sear for 2–3 min per side and finish in the oven for 10–15 min. Rest before serving.

Keep refrigerated below 3 °C. Cook before eating. Consume on day opened. Suitable for freezing on day of purchase for 6–9 months. Defrost thoroughly in the fridge before cooking.
