    Oven Roast (Recommended Method):
    Remove from fridge 30–60 minutes before cooking to bring to room temperature.
    Preheat oven to 220°C / Fan 200°C / Gas Mark 7.
    Pat the joint dry with kitchen paper and rub with oil, salt, pepper, and optional herbs (e.g., rosemary or thyme).
    Place in a roasting tray and cook at high heat for 20 minutes to seal.
    Reduce oven temperature to 180°C / Fan 160°C / Gas 4 and continue roasting for:
    20 minutes per 500g for medium-rare
    25 minutes per 500g for medium
    30 minutes per 500g for well done
    Once cooked, cover loosely with foil and rest for 20–30 minutes before carving. This allows the juices to redistribute, keeping the meat tender.

    Keep refrigerated below 5°C. Suitable for freezing. If frozen, defrost fully in the fridge and consume within 24 hours. Do not refreeze after thawing.
