Preheat oven to 175°C (350°F).
Season the joint with salt and pepper.
Heat an oven-safe pan over medium-high heat with 1 tbsp oil.
Sear all sides for 2–3 minutes until golden brown.
Transfer to the oven and roast for 20–25 minutes per pound (450–550g).
Cook to an internal temperature of 63°C for medium-rare or 71°C for medium.

Rest for 10 minutes before slicing against the grain.

Cook before eating. Consume on the day opened. Store below 3°C or freeze on day of purchase for 6–9 months. Defrost thoroughly in the refrigerator before cooking.
