Additional Ingredients

  • Vegetable Oil - 2 tbsp
  • Salt & Pepper - To taste
  • Fresh Thyme - 4 sprigs

Method

Step 1 - Prepare the Steak

Ensure your steaks are at room temperature before you begin cooking. Season both sides generously with mixed spice, ground pimento, salt, and pepper. This will help create a delicious crust on the steak when searing.

Step 2 - Sear the Steak

Heat a heavy-based frying pan over the highest heat setting and add the vegetable oil. Allow the oil to become very hot before adding the steaks. Once the pan is smoking hot, carefully place the steaks into the pan.

Cooking Times for Rump Steak (based on 1-inch thick cut):

  • Blue: 1 minute each side / Core temperature 54°C
  • Rare: 1½ minutes per side / Core temperature 57°C
  • Medium Rare: 2 minutes per side / Core temperature 63°C
  • Well-done: Cook for about 4-5 minutes each side, depending on thickness. / Core temperature 75°C
  • Medium: About 2¼ minutes per side / Core temperature 71°C

Step 3 - Add Butter and Thyme

After flipping the steak to cook the other side, add the butter and thyme sprigs to the pan. Once the butter has melted, use a spoon to continuously baste the steak with the melted butter and herbs. This will enhance the flavour and help achieve a beautiful, golden-brown crust.

Step 4 - Rest and Serve

Remove the steaks from the pan and allow them to rest for at least 2 minutes. This resting time is crucial as it allows the juices to redistribute throughout the steak, making it tender and juicy. Serve hot, garnished with fresh thyme and a side of your choice.

Serving suggestion

For the perfect steak dinner, serve your pan-seared rump steak with a side of creamy mashed potatoes, grilled vegetables, or a fresh green salad. This dish pairs wonderfully with a full-bodied red wine, such as a Malbec or Cabernet Sauvignon, to complement the rich, savoury flavours of the steak.
