  • Mozzarella Cheese - 150g (grated)
  • Olive Oil - 2tsp
  • Tomato Sauce - 500g
  • Penne Pasta - 300g
  • Fresh Basil leaves (for garnish)
  • Salt & Pepper - to taste

Method

Step 1 - Prepare the Sausages and Sauce

To start, preheat your oven to 200°C (180°C fan/gas mark 6). In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes until softened and translucent. Next, add the minced garlic and chili flakes, cooking for an additional 2 minutes until the garlic is fragrant and lightly golden.

Slice the Cumberland Sausages (GF) into bite-sized pieces and add them to the skillet. Cook the sausages until browned on all sides, approximately 5-7 minutes. Pour in the spicy tomato sauce and let it simmer for 10 minutes, allowing the flavours to meld together. Season the sauce with salt and pepper to taste.

Step 2 - Cook the Pasta

While the sauce is simmering, bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain the pasta and set it aside.

Step 3 - Combine and Bake

Combine the cooked pasta with the sausage and spicy tomato sauce mixture in the skillet, ensuring the pasta is well coated with the sauce. Transfer the mixture to a large baking dish.

Sprinkle the grated mozzarella and Parmesan cheese evenly over the top of the pasta. Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is golden and bubbly.

Step 4 - Garnish and Serve

Remove the dish from the oven and let it rest for about 5 minutes. Garnish with fresh basil leaves to add a burst of colour and flavours. Serve the pasta bake hot, alongside a light green salad or garlic bread for a complete meal experience.

Serving suggestion

For the best dining experience, garnish with fresh basil and serve with a side of crisp green salad or warm garlic bread. This dish pairs perfectly with a chilled glass of white wine or a robust red wine to complement the rich flavours.
