Preheat oven to 175°C (350°F).
Season with salt, pepper and herbs such as rosemary, thyme and garlic.
Sear on all sides to brown and enhance flavour.
Roast for approx. 45 minutes per kg for medium-rare (63°C internal temperature).
Rest 10–15 minutes before slicing.
Serve with roasted vegetables, potatoes or fresh salads.

Store below 3°C. Cook before eating. Consume on the day opened. Suitable for freezing on day of purchase for 6–9 months. Defrost thoroughly in the fridge before cooking.
