A boneless leg is the easy leg. With the bone out there is nothing to carve around, so you get even cooking, tidy slices and a joint you can open out for the barbecue or stuff and roll for a roast. It is a lean cut, so it rewards a hot start and a watchful eye, and it takes a rosemary and garlic roast or a spiced Caribbean marinade equally well.

How to cook a boneless leg of lamb Roast a boneless leg of lamb at 175°C (350°F) for about 45 minutes per kg for medium, adjusting to taste. With the bone removed it cooks evenly and carves easily. Rest it for 15 minutes before slicing.
Boneless vs bone-in leg of lambA boneless leg has the bone removed, so it is quicker to cook and much easier to carve, ideal if you want a fuss-free roast. A bone-in leg keeps the bone for extra depth of flavour and a traditional centrepiece. Choose boneless for convenience and even cooking, or choose our
