Pan/Grill:
Bring to room temperature for 30 minutes. Oil and season. Cook 3–4 minutes per side for medium-rare. Rest 5 minutes and slice against the grain.

Oven Method:
Preheat to 200°C (180°C fan). Sear 2–3 minutes per side in an ovenproof pan, then cook 10–12 minutes. Rest before slicing.

Keep refrigerated below 5°C. Once opened, consume within 48 hours. Suitable for freezing; defrost thoroughly before cooking.
