Oven roasting (recommended):
Remove pork from packaging and pat dry.
For crackling, score the skin and rub with salt and a drizzle of oil.
Preheat oven to 220°C (fan 200°C).
Roast uncovered for 25–30 mins to crisp the skin.
Reduce heat to 180°C (fan 160°C) and continue roasting for 25 mins per 500g, plus an extra 20 mins.
Rest for 20 mins before carving.

Slow-cooking alternative:
Roast at 160°C for 3–4 hours with cider, herbs, and root vegetables until tender and falling apart.

Keep refrigerated below 3°C.
Cook before eating.
Once opened, consume within 24 hours.
Suitable for home freezing: freeze on day of purchase and use within 6–9 months.
Defrost fully in a refrigerator before cooking.
