Grill Method:
Remove from fridge 30 minutes before cooking.
Rub with olive oil, salt, pepper, and herbs.
Preheat grill to medium-high heat.
Grill for 6–8 minutes per side until golden and cooked through.
Rest under foil for 3–4 minutes before serving.

Oven Method:
Preheat oven to 200°C (180°C fan) / Gas Mark 6.
Sear steak in an ovenproof pan for 2–3 minutes per side.
Transfer to the oven for 15–18 minutes until fully cooked.
Rest before serving for maximum tenderness.
