Method
Step 1 - Preheat the oven
Heat your oven to 200°C (180°C fan).
Step 2 - Season the lamb
Pat the lamb steaks dry. Rub with olive oil, garlic, rosemary, thyme, salt and black pepper. Let them sit at room temperature for 10 minutes – this helps them cook evenly.
Step 3 - Sear for flavour
Heat an ovenproof frying pan over a high heat. Sear the lamb steaks for 1–2 minutes each side until nicely browned.
Step 4 - Oven bake
Transfer the pan straight into the oven and cook for 8–10 minutes for medium, or 10–12 minutes if you like it more done.
Step 5 - Rest and serve
Remove from the oven, add a small knob of butter if you’re feeling indulgent, and rest the lamb for 5 minutes before serving.
