Method

Step 1

Preheat the oven to 200°C (fan 180°C). Season the pork shoulder steaks generously on both sides.

Step 2

Heat oil in a heavy oven-proof pan. Sear the pork for 3–4 minutes each side until well coloured. Remove and set aside.

Step 3

In the same pan, soften the onion for 2–3 minutes, then add garlic, apple and sage. Stir well.

Step 4

Return the pork to the pan, pour in the stock and place in the oven uncovered for 10–12 minutes, until cooked through and juicy.

Step 5

Rest for 2 minutes before serving, spooning the pan juices over the pork.
