Method

Step 1 - Lay the Foundation

Heat the olive oil in a frying pan over medium heat. Brown the sausages until lightly golden on all sides. You’re building flavour — not cooking them through.

Step 2 - Build the Base

Place onion, carrots and celery into the slow cooker. Sit the browned sausages on top.

Step 3 - Create the Sauce

Mix chopped tomatoes, stock, garlic and herbs. Season well. Pour over the sausages and add the bay leaf.

Step 4 - Let It Work

Cook on low for 6–8 hours (or high for 3–4 hours) until tender and the sauce has thickened.

Step 5 - Finish Strong

Remove the bay leaf. Adjust seasoning. Scatter with parsley and serve hot.
