Frequently Asked Questions
No. The tenderloin (or fillet) is a small, very lean muscle that sits beneath the loin. Pork loin is a larger roasting joint with more fat and a fuller flavour. Recipes that call for pork fillet mean the tenderloin.
You can buy free range pork tenderloin online from The Black Farmer, delivered chilled across the UK, or collect from our Brixton and White City farmshops in London.
Pork tenderloin, also called pork fillet, is a slim, lean muscle cut from beneath the loin. It is the most tender cut on the pig and cooks quickly, making it ideal for fast roasting or slicing into medallions.
Sear it all over in a hot pan, then roast at 200°C (180°C fan, Gas 6) for 20 to 25 minutes and rest for 5 minutes before slicing. Alternatively, cut it into medallions and pan-fry for 2 to 3 minutes per side. Avoid overcooking, as this lean cut dries out quickly.
This tenderloin comes from free range British pigs, reared outdoors with space to roam, from fully traceable, high welfare farms.
