    Preheat oven to 230 °C/210 °C fan/gas 8. Place joint in a roasting tray and roast for 15 minutes to start the crackling. Reduce oven to 180 °C/160 °C fan/gas 4 and continue roasting for 25‑30 minutes per 500 g plus 20 minutes, until the internal temperature reaches 75 °C and the crackling is crisp. Rest for 10‑15 minutes before carving. Alternatively, slice and add to casseroles or slow‑cook until tender.

    Keep refrigerated below 4 °C and store in its sealed packaging on the bottom shelf of the fridge. Cook before eating. Use within 3‑5 days of purchase. Suitable for freezing on the day of purchase; freeze for up to 6 months. Defrost thoroughly in the refrigerator and cook within 24 hours. Once cooked, refrigerate and consume within 3‑4 days.
