Grill or Pan Method:
Remove from the fridge 30 mins before cooking.
Lightly brush with olive oil and season with salt and pepper.
Grill or pan-fry for 4–5 minutes on each side (medium-rare).
Rest for 5 minutes before serving.

Oven Method:
Preheat oven to 200°C (180°C fan).
Sear each side for 2–3 minutes, then bake for 12–15 minutes.
Rest before slicing against the grain.
