Ingredients: 1 pork loin, boned and rolled Salt and pepper, to taste 2 tablespoons vegetable oil 1 tablespoon butter
Instructions: Preheat the oven to 350F (175C). Take the pork loin out of the refrigerator and let it sit at room temperature for about 30 minutes to an hour. This will ensure more even cooking. Season the pork loin generously with salt and pepper on all sides. Heat the vegetable oil in a large oven-safe skillet or roasting pan over medium-high heat. Carefully place the pork loin in the hot pan, seam side down if applicable. Sear the pork loin on all sides until it develops a golden-brown crust. This will take about 2-3 minutes per side. Once the pork loin is nicely browned, transfer it to the preheated oven. Roast the pork loin in the oven for about 20-25 minutes per pound, or until the internal temperature reaches 145F (63C) on an instant-read thermometer. Make sure to insert the thermometer into the thickest part of the meat, avoiding contact with the bone. While the pork loin is roasting, you can baste it occasionally with the pan juices to keep it moist and flavourful. Once the desired internal temperature is reached, remove the pork loin from the oven and transfer it to a cutting board. Let it rest for about 10 minutes to allow the juices to redistribute throughout the meat. Slice the pork loin into thin slices, about ½ inch thick, and serve immediately.
Optional: You can deglaze the roasting pan with some chicken or vegetable broth, and reduce it to make a flavourful pan sauce to serve alongside the pork loin.
