Goat is one of the most widely eaten meats in the world, and the star of some of the best-loved dishes in Caribbean and South Asian cooking. Our British goat is cut for exactly those dishes: diced on the bone for a proper curry goat, boneless for quicker stews, plus minced, koftas, meatballs, burgers and sausages. It is naturally lean, full of flavour, and rewards slow, gentle cooking.

How to cook goat

Because goat is lean, it suits low and slow cooking best. For curry goat, brown diced goat on the bone, then simmer with onion, garlic, thyme, Scotch bonnet and curry spices for around two hours, until the meat is tender and the gravy is rich. Boneless diced goat is quicker and easier to portion. The leg suits slow roasting, while minced goat is ideal for keema, koftas and meatballs.
